Tastes Menu
Ceviches
An assortment of special ceviches. Chef Bernardo recommends the Ikal 1150 Chardonnay to accompany these zesty dishes.
Breakfast
Breakfast at Esencia is a special time, served any where you like and at any time. The menu consists of local and regional Mexican specialties and a few international comfort foods. Some of our guests favorites are Eggs Sardou, Frittata Esencia, and Chef Bernardo's daily specials.
Lunch
Lunch is taken pool side. Some of our guests favorites are the Seabass Filet, our Veal Hamburger, and sometimes just a light Ceviche from our ceviche menu.
Dinner
Guests gather for dinner most nights at Sal y Fuego, the garden side open air palapa where Chef Bernardo works his magic. The cuisine is authentic Meso-American style with our own creativity. Some of our guest favorites include, traditional Yucatan Lime Soup, Lobster Taquitos, and the Tikin Xic.
Esencia's wine list covers local Mexican wines, as well as wines from Latin America interspersed with favorites from Europe and Australia.

Poolside Pavilion
Mornings have always been special at Esencia. The Duchess herself always enjoyed sipping her coffee and juice while watching the beachfront come to life as the seabirds set out for their day of fishing and the sun begins its lazy arc across the Caribbean. These days, guests enjoy their breakfast in the shaded poolside pavilion, where they can linger over their morning meal and prepare for a day of fun in the sun.
Sal y Fuego
The chef and his team don't just prepare the meals, they also plant, tend and harvest many of the ingredients that go into the kitchen's most popular dishes. From fresh herbs and exotic spices to tropical fruits, vegetables and produce, many of the items served at Esencia were grown right in the estate's own gardens. There's something about the warm Caribbean sunshine, rich Mayan soil and fresh tropical rain that help to grow the finest ingredients available and ensure that the food at Esencia is always fresh and always appealing.
